Skillet Peach Cobbler – from healthy whole grain flour

Peach cobbler is a southern classic that seems to be everyone’s favorite. If I need to put a smile on my dad’s face, I just make him this dish and all is right in the world.

This peach cobbler is made from fresh milled grains and THAT makes all the difference. Whole grains that have been transformed into nutrient dense flour are not only a rich, nourishing food – but are much more flavorful that plain white flour.

For this recipe I strongly recommend that you DO use home-ground flour and not substitute for something lesser. If you’re new to milling grains at home, I have a full post on Homemade Flour from Whole Grains that explains in detail all you need to know.

The Ingredients

Spelt flour – this peach cobbler recipe really comes to life because of the home-ground Spelt flour. Spelt has this beautiful naturally occurring sweet, nutty flavor that is just perfect for this. If you don’t have Spelt, you can substitute Soft White Wheat but I haven’t tested this recipe with any other grains.

Sucanat – this natural sweetener has become my go-to in just about any baking scenario. Sucanat, like Rapadura, is dried cane juice without the molasses removed. So the minerals remain intact. You can substitute an equal amount of another organic sugar, like honey granules.

Vanilla Bean Paste – I can’t sing enough praises for this culinary hidden gem. Up until a few years ago, I always opted for the highest quality vanilla extract. But it just doesn’t compare to the rich, robust punch that vanilla bean paste has to offer. So, yes… vanilla extract will work… but grab some paste if you truly love to bake (and tell me how much you love it).

Peaches – Use peaches that are ripe and fresh for the best results. Peel them and then slice in strips or chunks. You can substitute canned peaches (if you must), but drain the liquids first. Check out other fresh fruit recommendations below!

Let’s Get Baking

Preheat your oven to 375 degrees Fahrenheit.

Put the stick of butter in a cast iron skillet (or a 9×13″ baking dish) and set it inside the oven while it preheats. (Keep an eye on the butter so it doesn’t burn.) All ingredient measurements are listed in the recipe below.

Next, whisk together the Spelt flour, Sucanat, baking powder, and salt in a bowl or a large mixing cup.

In a separate bowl, whisk together the milk and the vanilla bean paste. Pour the liquid mixture all at once into the flour mixture and whisk to incorporate.

After the butter has melted, carefully pull the skillet out of the oven. Pour the batter into the warm skillet on top of the melted butter. Do NOT stir.

Evenly lay the peach slices overtop of the batter.

Bake in the preheated oven for 25-30 minutes or until cooked throughout. This delicious dessert can be served warm with ice cream or cold. It will keep in an airtight container for up to one week in the fridge.

Ingredients
  

  • ½ cup Unsalted butter
  • cups Spelt Flour preferably freshly ground
  • 1 cup Sucanat or sugar substitute
  • 2 tsp Baking Powder
  • ½ tsp Salt
  • 1 cup Whole Milk
  • 1 tsp Vanilla Bean Paste or Vanilla Extract
  • 1 lb Fresh Peaches, sliced and peeled*

Instructions

    1¼ cups Spelt Flour, 1 cup Sucanat, 2 tsp Baking Powder, ½ tsp Salt
  • In a separate bowl, whisk together milk and vanilla bean paste. Add all at once to flour mixture, stir to incorporate.
    1 cup Whole Milk, 1 tsp Vanilla Bean Paste or Vanilla Extract
  • After butter has melted, pull skillet out of the oven. Pour batter into warm skillet on top of melted butter. Do NOT stir. Evenly lay the peach slices overtop of the batter.
    1 lb Fresh Peaches, sliced and peeled*
  • Bake in preheated oven for 25-30 minutes or until cooked throughout. This delicious dessert can be served warm with ice cream or cold. Will keep in an airtight container for up to one week in the fridge.

Notes

You can use an equal amount of any fruit as a substitute for the peaches. This warm dessert is even great with bananas.

    This is the best peach cobbler recipe I have ever made! Spelt and vanilla paste make all the difference in a fruit cobbler. Any fruit or berry used in this recipe is delicious!
