In my healthy eating journey, this was one of the first recipes I added to our monthly rotation. BBQ Chicken Nachos? You say that’s healthy? And I say: it all depends on the ingredients.

Often times, I think people confuse “eating healthy” with “dieting.” Those terms are NOT interchangeable. Our family eats completely savory and delicious meals that no one would ever label “diet.” It’s food that is nourishing and nutrient dense because it’s real, whole ingredients prepared properly.

Always Choose Quality Ingredients

If you want to eat healthier, a simple way is to replace a conventional brand with an organic one. Make sure what you choose has only ingredients you can pronounce. Real food.

The chips I use for this recipe are from Late July. They are made with expeller pressed sunflower oil and organic corn. In something like chips, the biggest culprits that affect your health are the highly processed, toxic oils. When selecting chips (or anything for that matter) avoid canola oil, vegetable oil, soybean oil, corn oil, etc.

For the BBQ sauce, this is a good brand or you could make your own. BBQ sauce tastes good because it’s loaded with sugar. And the leading ingredient in most of the popular brands is High Fructose Corn Syrup (you should know by now that this should be avoided at all costs).

All the other ingredients in this recipe should be pretty straightforward – I just wanted to shed light on the above two, in case you needed direction on which to choose so this could still be healthful to you and yours!

Cook the Bacon and Chicken

Preheat your oven to 350 degrees Fahrenheit.

Cut bacon strips in 1/2 inch cubes and toss them in a hot cast iron skillet or heavy bottomed pan. All ingredient measurements are listed in the recipe below.

Get the bacon crispy and then remove it from the pan using a slotted spoon or tongs. You want the bacon grease to stay in the pan.

To the bacon grease, add the cut chicken and spices (garlic powder, chili powder, salt, and pepper). Once the chicken is cooked through, pour in the BBQ sauce. Let the sauce cook a few minutes until it starts to reduce.

Next, Assemble Your BBQ Chicken Nachos

I like to cook everything in the same skillet but you could also line a 9×13″ pan or cookie sheet with parchment paper for baking.

If you’re using the same skillet, pour the chicken mixture out onto a plate. Add the chips to the skillet. Top the chips with the chicken, the cooked bacon, some diced red onion, and the shredded cheese.

Place the skillet into your hot oven and bake 10 to 15 minutes.

Once the cheese has melted, carefully remove the skillet from the oven. It’s easy to cut with a spatula and serve on individual plates. Add sour cream, cilantro, and/or avocado for toppings! So good.

Skillet BBQ Chicken Nachos

I have been making this dish for years and every time I do, I'm amazed by how good it is. Eating healthy doesn't have to be boring – in fact, it can be the opposite! Enter: BBQ Chicken Nachos.

Ingredients
  

  • 4 Bacon Strips, Sliced
  • 2 Chicken Breasts, diced
  • 1 tbsp Chili Powder
  • 1 tbsp Garlic Powder
  • ½ tbsp Salt
  • ½ tbsp Black Pepper
  • 1 cup BBQ Sauce
  • 11 oz Tortilla Chips
  • 8 oz Cheddar Cheese, shredded
  • ¼ cup Red Onion, sliced
  • Sour Cream (optional)
  • Avocado (optional)
  • Cilantro (optional)

Instructions
 

  • Preheat oven to 350°F.
  • Cook bacon in skillet over medium high heat until browned and crispy. Remove from pan using a slotted spoon or tongs.

  • Add chicken to bacon grease in skillet, followed by the seasonings. Cook chicken, stirring to prevent sticking.
    2 Chicken Breasts, diced, 1 tbsp Chili Powder, 1 tbsp Garlic Powder, ½ tbsp Salt, ½ tbsp Black Pepper
  • Once chicken is cooked, stir in BBQ sauce. Let sauce cook 3-5 minutes and reduce slightly. Remove chicken from skillet.
    1 cup BBQ Sauce
  • Remove skillet from heat and pour in chips. Top chips with chicken, bacon, red onion, and cheese. Carefully place skillet in preheated oven.
    8 oz Cheddar Cheese, shredded, ¼ cup Red Onion, sliced, 11 oz Tortilla Chips
  • Bake 10-15 minutes or until cheese is melted. Remove from oven. Serve warm topped with sour cream, avocado, and/or cilantro.
