If you’re looking for an easy chicken breast recipe with very few ingredients, then you found it! This recipe is guaranteed to give you juicy and moist chicken breasts, every time. Parmesan crusted chicken breasts are a meal all by themselves but if you’re looking for ways to serve them, I have a list below.
Simple Ingredients to Make the Best Chicken Breasts
Chicken Breasts: We raise our own meat birds, so every portion of the animal gets used. If I split up the chicken (and not cook it whole) I will typically fry the thighs, drums, and wings and then use the breasts and tenders in another meal, like this one. Just try to opt for birds that are raised under healthy conditions, from a local farm is best.
Parmesan Cheese: Unless I make cheese, everything I use is from Hilltop Meadow Farm. They ship beautiful, raw cheese right to your door! They even sell parmesan in 5lb blocks, which we burn through pretty quickly.
Breadcrumbs: If you make your own bread you should also be making your own breadcrumbs. Any time bread gets just a tad too old, I toast it in the oven, chop it in a food processer, and freeze it for later use. It’s quick and easy and you know exactly what the ingredients are.
Flour: All of my flour is freshly milled that day (usually per recipe). If you’re not sure why fresh milled flour is better, read my article here. I recommend soft white wheat for this oven baked chicken breast recipe, but pretty much any flour will do.
Eggs: I’m blessed to have a flock of laying hens. It was the first thing I wanted when we moved to acreage. If you buy eggs, try to source them from a local farm. The quality is noticeably better when they come from “happy” chickens.
Meals to Make with Chicken Breasts
These parmesan crusted chicken breasts are so delicious all by themselves, so the list of what to serve them with is really endless. Here are some simple chicken breast recipes for dinner. We LOVE these with tomato soup. You could serve them with just about any pasta, whether it’s a tomato based sauce or drizzled with olive oil or butter.
These would also be delicious cut and served on top of salad, like something fruity or with a hearty Caesar dressing. Have them on a sandwich with Brie cheese, fig jam, and some zesty arugula! Or make yourself a BLT (bacon, lettuce, and tomato) with chicken. There is no limit with these boneless chicken breast dinner ideas.
Ready to Make Parmesan Crusted Chicken Breasts?
Let’s start this quick chicken breast recipe. Preheat your oven to 400 degrees Fahrenheit.
Place the chicken breasts on a cutting board or plate, cover them with plastic wrap, and use a kitchen mallet, rolling pin, or something heavy to beat the chicken until they’re all equal thickness (less than 1 inch thick). Beating the chicken breasts tenderizes the meat and also helps them to cook more evenly if they’re all the same thickness.
After tenderizing, remove the plastic wrap and season both sides of the chicken with salt and pepper. Set them aside. All ingredient measurements are listed in the recipe below.
Next, gather three separate medium sized bowls. In the first bowl, mix the grated parmesan cheese and breadcrumbs. In the second bowl, add the flour. In the third bowl, beat the two eggs. Set everything aside.
In a large cast iron skillet or heavy bottom oven safe pan, melt the butter and olive oil over medium heat. Dip your seasoned chicken in the flour, then in the eggs, then in the breadcrumb/parmesan mixture, coating each side well as you move along.
Place the chicken breasts into the hot pan. Cook them on each side until they’re golden brown, roughly 2 minutes per side. Place an oven safe thermometer like this in one of the chicken breasts and carefully put the pan into the hot oven. (This thermometer works great. If you don’t have one that’s oven safe, simply check the chicken after about 10 minutes in the oven. They’re done when they reach 165℉.)
Bake the chicken breasts in the preheated oven until the internal temperature reaches 165℉, about 10 minutes. Serve the chicken breasts warm with just about anything (see the recommended list above). These are simply delicious!
