Hamburger Casserole

Just like the classic but with real ingredients! It's also extremely quick, easy, and a great way to stretch 1lb of ground beef into a meal for the whole family.

Ingredients
  

  • 2 tbsp Unsalted Butter
  • ½ Onion, finely diced
  • 1 Garlic clove, minced
  • 1 lb Ground Beef*
  • 1 tbsp Flour (preferably home-ground)
  • 1 tbsp Paprika
  • 2 tsp Salt
  • 1 tsp Honey Granules or Sucanat or sugar
  • ½ tsp Black Pepper
  • 2 cups Hot water
  • 1 cup Milk
  • ½ cup Heavy Cream
  • 2 cups Uncooked pasta (I use elbows)
  • 2 cups Cheddar cheese, shredded and packed full (shred 8oz block)

Instructions
 

  • In a Dutch oven or heavy bottom pot, melt butter over medium heat. While butter is melting, add onion and cook until translucent. Add garlic and stir.

  • Add ground beef, flour, and seasonings. Brown the beef, breaking it up as it cooks, evenly incorporating the spices.
    1 lb Ground Beef*, 1 tbsp Flour (preferably home-ground), 1 tbsp Paprika, 2 tsp Salt, 1 tsp Honey Granules or Sucanat or sugar, ½ tsp Black Pepper
  • Once beef is browned, stir in hot water, milk, heavy cream, and uncooked pasta. Turn heat up and bring to a boil.
    2 cups Hot water, 1 cup Milk, ½ cup Heavy Cream, 2 cups Uncooked pasta (I use elbows)
  • Cover with lid, reduce heat to low and simmer 6 to 8 minutes, or until pasta is al dente. (Cook time depends on the type of pasta you use. Even after being removed from the heat, the pasta will continue to absorb the liquids so be careful not to overcook the noodles.)
  • Remove from heat, add cheese, and stir thoroughly until cheese is completely melted.
    2 cups Cheddar cheese, shredded and packed full (shred 8oz block)
  • Let it sit 10-15 minutes to thicken. Serve warm. We love some fresh Thyme on top.

Notes

*I source all my ground beef from a local farm. It's extremely lean. If you're using store bought with a higher fat content, you may want to add in an extra tablespoon or two (depending on how greasy it is) of flour to absorb the grease. (I don't recommend draining the grease.)
