Parmesan Crusted Chicken Breasts

If you're looking for an easy chicken breast recipe with very few ingredients, then you found it! This recipe is guaranteed to give you juicy and moist chicken breasts, every time. Parmesan crusted chicken breasts are a meal all by themselves but you can serve them with noodles, tomato soup, on a sandwich, or over a bed of lettuce. The possibilities are endless!

Ingredients
  

  • 2 Chicken Breasts with skin removed
  • ½ tsp Salt
  • tsp Black Pepper
  • ½ cup Parmesan cheese, finely grated
  • ½ cup Breadcrumbs
  • ½ cup Soft White Wheat flour (any flour will do)
  • 2 Eggs, beaten
  • 2 tbsp Butter
  • 1 tbsp Olive Oil

Instructions
 

  • Preheat your oven to 400℉.
  • Place chicken breasts on a cutting board or plate, cover with plastic wrap, and use a kitchen mallet, rolling pin, or something heavy to beat the chicken until it's all equal thickness (less than 1 inch thick).* Remove plastic wrap and season both sides of the chicken with salt and pepper. Set aside.

  • Gather three separate bowls. In the first bowl, mix the grated parmesan cheese and breadcrumbs. In the second bowl, add the flour. In the third bowl, beat the two eggs. Set everything aside.

  • In a large cast iron skillet or heavy bottom oven safe pan, melt the butter and olive oil over medium heat.
    2 tbsp Butter, 1 tbsp Olive Oil
  • Dip your seasoned chicken in the flour, then eggs, then breadcrumb/parmesan mixture, coating each side well as you move along. Place the chicken breasts into the hot pan.
  • Cook on each side until golden brown, roughly 2 minutes per side. Place an oven safe thermometer in one of the chicken breasts and carefully put the pan into the hot oven.
  • Bake in preheated oven until the internal temperature reaches 165℉, about 10 minutes.** Serve the chicken breasts warm with just about anything... pasta, tomato soup, over salad, etc. These are simply delicious!

Notes

*Beating chicken breasts before cooking has a few benefits: it tenderizes the meat and also makes it all the same thickness so it cooks more evenly.
**This thermometer works great. If you don't have one that's oven safe, simply check the chicken after about 10 minutes in the oven. It's done when it reaches 165℉.
